First off, Im not a professional chef. I was lucky enough to work under a great chef when I was in college and learned to value a sharp edged knife. I have purchased a lot of knives over the years. I have good german knives (F Dick) and good japanese knives (Misono, Hattori and Shun) I have never been able to put a good edge on a knife consistently. Ive gotten to the point that I rotate and send out my knives to be professionally sharpened...and wrecked.
Ah...The Lansky System. it is a system...it works, its fairly easy and it consistently puts a great edge on my knives. I practiced on some NSF junk I keep to put out for the inlaws when they house sit and they edge it put on the pitted and chunked edge was great. if you buy it get the universal mount because it can be awkward w/o it.

This is a sharpening system. It allows you to select differing bevel angles depending on what you use your edge for. The basis of the system is the clamp and guide rod which hold your edge perfectly every pass across the stone. Working through the progressivley finer stones will result in a razor (and I mean razor) sharp edge.
After a proper edge has been put on a knife, re-sharpening takes only a matter of minutes and only the finer stones need be used (unless you use your knifes to chop wood or cut wire). Even abused blades can be honed back to razor sharpness,
My kids hated when I sharpened the knives cause they knew they were going to have to be extra careful- but thats OK, you should be extra careful when using a properly sharpened knife!

I was introduced to the Lansky Sharpening System in 1989 and have yet to use something better. I use it to keep my kitchen and sporting knives honed like a razor. I've even used it on a knife made by a backyard blacksmith. The blade had a blunt edge until the Lansky did its job. The edge was shaped to the ideal angle perfect even on both sides of the blade and polished like a mirror. When he sliced a sheet of paper he was amazed at the ease of use and the sharpness the system produced. He also bought his own Lansky the next day.
I recommend this product to anyone who needs the best possible edge on their knives. The blade clamp and guide rods keep the angle you choose even on both sides of your blade.
You will never have a dull knife again!

It works as planned. Produced a nice razor sharp edge on my kitchen knives (20* angle) and on my pocket knife (25* angle). Both angles are capable of shredding paper after sharpening.
I did have to do some knives more than once to achieve the edge I wanted, but I'll put that down as me still learning how to do it, and/or progressing through the stones too quickly (not spending enough time on one before moving to the next). It does seem that they get a little better edge if I finish by stropping them on the wood table or the bottom of a ceramic plate or mug (an area without glaze)
I highly recommend this kit if you're looking for a really sharp, durable edge, that you don't have to re-do every time you use the knife.

I purchased this item about two weeks ago and have sharpened a couple of my pocket knives with it so far.
The Lansky system is very easy to use. The instructions are straight forward and there's an instructional video on the Lansky website (http://www.lanskysharpeners.com/video.php) too.
The first knife I sharpened was old and abused, so I started out with the extra-course stone and worked my way up. I ended up with a decently sharp blade after my first attempt.
The second knife I tried was newer and only recently dull. I started out with the Medium stone and worked through to the Ultra-fine. This produced a blade sharp enough to shave arm hairs without too much effort.
